Ingredients

  • 1/2 c. unsalted butter plus
  • 2 Tbsp. unsalted butter room temperature
  •     Butter for preparing pan
  • 1/2 c. flour plus
  • 2 Tbsp. flour plus more
  • 1 c. sugar
  • 1/2 c. cocoa pwdr
  • 1/2 c. water
  • 1/2 tsp salt
  • 1 1/2 tsp baking pwdr
  • 3/4 tsp baking soda
  • 4 x Large eggs
  • 1 1/2 c. whipping cream
  • 18 ounce semisweet chocolate, squares or possibly chips
  •     (roughly-chop if using squares)
  • 2 Tbsp. orange-flavored liqueur
  •     (such as Grand Marnier)
  •     Ganache
  •     Mandarin oranges (optional) garnish

Directions

  1. For the Cake: Heat the oven to 350 degrees. Butter and flour a 9-inch round cake pan.
  2. Beat together the butter and sugar till light and creamy, about 4 min. Stir the cocoa and water together in a bowl and add in to the butter mix. Beat 7 min, scraping down the sides of the bowl often. Add in the flour, salt, baking pwdr and baking soda. Beat 2 min longer. Add in the Large eggs. Mix till the batter is shiny and smooth, 5 min, scraping down the sides of the bowl.
  3. Pour the batter into the pan. Bake the cake till the center springs back when lightly touched, about 40 min. Invert the cake onto a wire rack to cold completely.
  4. For the Ganache: Bring the whipping cream to a simmer. Remove from the heat. Stir in the chocolate pcs till smooth. Remove 1 1/2 c. of the ganache and set aside at room temperature. Chill the remaining 1 c. till thick and creamy, 1 hour.
  5. For Assembly: Split the cake into 3 horizontal layers. Drizzle the orange-flavored liqueur over each layer. Frost the layers with the chilled Ganache. Pour the remaining Ganache over the top. Garnish with the oranges.
  6. This recipe yields 8 to 10 servings.
