Ingredients

  • 1 box couscous
  • 2 c. chicken broth, canned or possibly fresh
  • 2 sm zucchini/courgettes
  •     handful of cherry tomatoes
  • 1 can minestrone soup
  •     garlic
  •     extra virgin olive oil

Directions

  1. Bring the stock to a boil in a saucepan. Add in the couscous, stir.
  2. Cover. Turn off heat.
  3. Saute/fry garlic in extra virgin olive oil in a frying pan. Add in zucchini/courgette,saute/fry for 2-3 min. Add in sliced tomatoes. Blend. Add in minestrone, heat through.
  4. Place couscous in a bowl, add in vegetables. Add in left over meat, if you like (leftover buffalo chicken wings, sliced, is especially good.
