Ingredients

  • 1½ cups pumpkin, canned or freshly cooked, mashed
  • ½ cup sugar
  • 2 cups milk
  • 2 eggs, beaten
  • 1 teaspoon each cinnamon, ginger, and salt

Directions

  1. Preheat oven to 425 degrees F.
  2. Mix together pumpkin, sugar,
  3. milk, beaten eggs, spices, and salt. Blend well.
  4. Pour into unbaked pie crust.
  5. Bake at 450 degrees for 10 minutes, then reduce heat to
  6. 325 degrees and continue baking for another 20 to 30 minutes.
  7. Top with meringue and bake an additional 2 to 4 minutes or
  8. until golden brown. Or you can top with whipped cream when
  9. served
