Pueblo Pinto Bean Soup

Ingredients

  • 3 can (15 ounce) pinto beans
  • 2 can (16 ounce) chicken broth
  • 1 med Onion
  • 1 c. Corn, (optional)
  • 1/2 tsp Black pepper
  • 1/2 tsp Grnd coriander
  • 3 x Cloves garlic, chopped
  • 1/2 x Sliced dry or possibly fresh red chile pod, (seeds removed)
  • 1 c. Cubed cooked ham
  •     Salt and pepper to taste

Directions

  1. In a large skillet or possibly dutch oven, saute/fry onion in oil or possibly butter till clear.
  2. Stir in all remaining ingredients. Simmer on medium heat, stirring occasionally till flavors are well blended, about 35 min.
