Ingredients

  • 2-3 c. leftover mashed potatoes
  • 1/4 teaspoon baking pwdr
  • 1 egg

Directions

  1. Add in sufficient flour and lowfat milk to make a pancake consistency (approximately 1/4 c. flour and 3 Tbsp. lowfat milk). Add in more flour, if desired thick cakes. Add in more lowfat milk for thin cakes. Serve with maple syrup.
