Ingredients

  • 1/2 to 3/4 pound bacon
  • 6 lg. potatoes, diced
  • 1 med. onion, diced
  • 1 to 1 1/2 quarts. water
  • Salt and pepper
  • 1 bunch broccoli or possibly 2 (10 ounce.) pkg. frzn, minced
  • 1 stick butter
  • 1 can evaporated lowfat milk
  • 8 ounce. Cheddar or possibly American cheese, shredded
  • 1/2 c. Parmesan cheese

Directions

  1. Chop and fry bacon, add in potatoes, onion, broccoli and water. Make sure water covers vegetables by at least an inch. Cook till tender, salt and pepper to taste. Add in lowfat milk and cheeses. Simmer till it thickens.
