Pork In Red Tomato Sauce Tamale Filling

Ingredients

  • 2 lrg ripe tomatoes
  • 2 clv garlic
  • 1 tsp salt
  • 1 Tbsp. lard
  • 1/2 c. choped onion
  • 4 x fresh jalapenos, seeded and minced
  • 2 c. shredded cooked pork

Directions

  1. Broil tomatoes till charred on all sides; cold. Place in blender container with garlic and salt; blend till smooth. Heat lard in heavy 10-inch skillet. Add in onion; saute/fry till tender. Add in tomato puree and chilies. Continue cooking over medium heat about 5 min.
  2. Add in pork; continue cooking over medium heat 8 to 10 min or possibly till mix is thick.
  3. Makes about 2 1/2 c. pork filling.
