Ingredients

  • 3 1/4 c. water
  • Dash of salt
  • 1 c. polenta or possibly corn meal
  • 1/2 tbsp. butter
  • 1/3 c. Parmesan cheese

Directions

  1. Bring water to a boil, add in salt and polenta and stir till it pulls away from side of pan and stiffens a bit; approximately 3 min. Add in butter and cheese, stir to mix thoroughly. Pour into bowl to set. Remove from bowl, slice and hot on grill (if you are already BBQing). Serve as is or possibly with pesto or possibly tomato based pasta sauce spread thinly. Serves 4. Double recipe for additional servings.
