Pickling Beets

Ingredients

2 c. sugar
1 c. water or possibly beet juice

1 c. vinegar
Salt to taste

Directions

Boil washed beets till almost done. Peel, cut in chunks. Small onces can be left whole and put in jars. Pour syrup over beets. Cool pack 5-10 min.
