Ingredients

  • 1 c. parsley, minced
  • 1 c. basil, minced
  • 2 x garlic cloves, chopped
  • 1 Tbsp. + 1 t extra virgin olive oil
  • 2 Tbsp. parmesan cheese
  • 1/2 x recipe basic pizza dough
  • 1 1/2 c. ricotta cheese, part skim
  • 4 1/2 ounce mozzarella, part skim
  • 2 Tbsp. skim lowfat milk
  • 4 lrg plum tomatoes
  • 1/4 c. beef broth

Directions

  1. Preheat oven to 475F. Mix parsley, basid, garlic, broth, oil and 1 tb parmesan till combined. Spread pizza dough with pesto. In medium bowl, combine ricotta cheese, mozzarella, lowfat milk and reminag 1 tb parmesan.
  2. Spread cheese mix proportionately over pesto; arrange tomato slices over chees.
  3. Bake 20-25 min, till crust is golden brown.
