Ingredients

  • 6 tbsp. butter
  • 1/2 c. minced celery
  • 1/2 c. pecans
  • 1/4 c. minced onion
  • 1 c. herb seasoned stuffing mix
  • 1/2 teaspoon salt
  • 1 tbsp. minced parsley
  • 1/4 teaspoon pepper
  • 6 center cut chops, 1 1/2" thick with pocket for stuffing
  • 1/2 c. apple juice

Directions

  1. In large skillet heat 4 Tbsp. butter over medium heat. Add in celery, pecans and onion, saute/fry till tender. Fold in stuffing mix, parsley, salt and pepper. Stuff mix into pork chops. Heat remaining butter in skillet, slowly brown chops on both sides. Transfer to shallow baking dish, pour apple juice over chops. Cover, bake 350 degrees for 1 hour or possibly till tender.
