Pear And Raisin Cobbler With Cheddar Topping

Ingredients

  • 6 lrg , slightly under-ripe Bartlett pears, peeled, cored, and sliced (about
  • 1/2 c. raisins
  • 1/2 c. sugar
  • 1 Tbsp. water
  • 1 Tbsp. plus 1 tsp. cornstarch
  • 1 Tbsp. lemon juice
  • 1/2 tsp cinnamon
  • 1 1/2 c. flour
  • 1/2 c. sugar
  • 2 1/2 tsp baking pwdr
  • 3 Tbsp. butter, softened
  • 1/3 c. finely shredded sharp Cheddar cheese
  • 3 x to 4 Tbsp. lowfat milk
  • 1 x egg
  •     Preheat oven to 400 degrees.

Directions

  1. Butter a 2-qt shallow baking dish and set aside.
  2. Combine all filling ingredients in a medium saucepan. Cook over medium heat till pears are warm and mix is slightly thick, about 5 min; pour into prepared baking dish.
  3. To prepare topping: Stir together flour, sugar and baking pwdr in a small bowl. Cut in butter with a pastry blender or possibly fork till mix resembles coarse crumbs. Stir in cheese, lowfat milk and egg (mix will be very thick). Drop by spoonfuls over pear filling.
  4. Bake for 25 to 30 min, or possibly till topping mix is set, tenting loosely with foil if topping browns too quickly.
  5. Let cold slightly and serve. This dessert is best when still slightly hot.
  6. Top with vanilla ice cream or possibly a dollop of whipped cream, if you like.
