Ingredients

  • 1 sm Halloumi Cheese
  • 1 x Tomato, (sliced)
  • 6 x Olives, (pitted and minced)
  • 50 gm Capers
  • 1 x Shallot, (minced)
  • 1 x Lime, (juice)
  •     Olive Bread
  • 1 Tbsp. Vinegar
  • 4 Tbsp. Extra virgin olive oil, (to panfry halloumi)
  • 2 tsp Mustard
  • 8 sprg Minced Basil
  • 50 gm Mixed Salad Leaves

Directions

  1. Mix the mustard, oil, vinegar, capers, olives and lime juice in a bowl and season. Next add in the minced basil.
  2. Pan fry the bread in plenty of extra virgin olive oil till golden brown. Drain on paper.
  3. Fry the cheese on a high heat till golden brown.
  4. Season the tomatoes and place on top of the bread with the minced basil.
  5. Place the cheese on the top and sprinkle over vinaigrette.
  6. Serve with dressed salad leaves.
