Ingredients

  • 2 lb crappie fillets
  • 1 c. corn meal
  • 1 c. flour
  • 3 x Large eggs beaten with
  •     A little lowfat milk
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Peanut oil as needed

Directions

  1. Mix corn meal and flour together in a large zip-seal plastic bag.
  2. Salt and pepper each fish fillet, dip in egg, then drop in bag and shake till coated with the meal/flour mix.
  3. Drop fillets in warm peanut oil poured about 1/2-inch deep in a cast-iron skillet. Cook till fillets flake easily with a fork.
