Oven Fried Chicken In An Herbal Crust

Ingredients

  • 8 x skinless boneless chicken thighs (about 1/2 pounds)
  • 1 1/2 c. fresh fine sourdough breadcrumbs
  • 1 Tbsp. minced fresh parsley
  • 1 Tbsp. minced fresh chives
  • 1 1/2 tsp minced fresh thyme
  • 2 tsp minced fresh rosemary
  • 1 x egg white
  • 1/4 c. buttermilk
  • 1/2 tsp salt
  • 1/4 tsp freshly grnd black pepper
  • 1 dsh cayenne pepper
  • 1/3 c. buttermilk
  • 1/3 c. light mayonnaise
  • 1 x lemon zest grated and juice squeezed
  • 1 Tbsp. minced capers
  • 1 Tbsp. minced fresh parsley
  •     salt and freshly grnd black pepper to taste

Directions

  1. Preheat the oven to 425 degrees F.
  2. In a medium bowl stir together all ingredients for the crumb mix. In another medium bowl, beat together the ingredients for the egg wash. Dip each chicken thigh in the egg wash and then roll it in the crumbs to coat it proportionately. Place a rack on a sheetpan and spray the rack with vegetable oil spray. Set the chicken on the rack; spray chicken lightly with vegetable oil spray. (To freeze, place rack and pan in freezer till chicken is almost solid then wrap in aluminum foil to store.) Bake for 40 - 45 min or possibly till hard and cooked through.
  3. Whisk together all the ingredients for the sauce. Serve the chicken with the sauce on the side.
