,%20he%20came%20next%20to%20me%20and%20asked%20in%20the%20cutest%20possible%20way%20that%20he%20wanted%20chocolate%20cupcakes.%20How%20can%20I%20say%20no%20to%20that%20adorable%20little%20guy!%3C/p%3E%3Cp%3EI%20do%20have%20a%20couple%20of%20eggless%20chocolate%20cake/cupcakes%20already%20but%20didn%E2%80%99t%20want%20to%20try%20them%20because%20I%20always%20look%20forward%20to%20try%20new%20recipes%20so%20that%20I%20can%20blog%20about%20it!%20Yes%20you%20got%20me!%20While%20doing%20the%20search%20somehow%20got%20to%20this%20one%20bowl%20chocolate%20cake%20recipe.%20It%20was%20already%2011pm%20and%20I%20needed%20something%20pretty%20simple%20like%20that,%20which%20can%20be%20whipped%20up%20in%20a%20jiffy%20and%20still%20look%20like%20I%20slogged%20big%20time%20in%20the%20kitchen.%3C/p%3E%3Cp%3EBecause%20I%20already%20have%20enough%20luck%20with%20the%20tofu%20and%20cocoa%20combination%20especially%20in%20this%20%E2%80%9CI%20can%E2%80%99t%20believe%20it%E2%80%99s%20eggless%20chocolate%20cake%E2%80%9D%20recipe,%20I%20decided%20to%20use%20tofu%20itself%20in%20this%20recipe%20too%20as%20the%20egg%20substitute.%20No%20wonder%20it%20turned%20out%20great!%3C/p%3E%3Cp%3EOne%20Bowl%20Eggless%20Chocolate%20Cupcakes%3C/p%3E%3Cp%3EPrep%20time:%2015%20Mins%3C/p%3E%3Cp%3ECook%20time:%2023%20Mins%3C/p%3E%3Cp%3EYields:%2015%20Cupcakes%3C/p%3E%3Cp%3EIf%20you%20are%20in%20a%20hurry%20yet%20want%20to%20bake%20chocolate%20cupcakes%20that%20looks%20great%20and%20tastes%20%E2%80%9Cout%20of%20this%20world%E2%80%9D,%20then%20this%20one%20bowl%20eggless%20chocolate%20cake%20recipe%20is%20your%20answer.%3C/p%3E%3Cp%3EPreheat%20oven%20at%20350F/180C%20for%2015%20minutes.%20Line%20muffin%20tin%20with%20cupcake%20liners.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20whisk%20together%20the%20dry%20ingredients.%20Add%20the%20ingredients%20mentioned%20under%20the%20wet%20mix%20one%20after%20the%20other%20and%20beat%20it%20well%20with%20an%20electric%20beater%20until%20the%20batter%20is%20smooth.%3C/p%3E%3Cp%3EFill%20each%20muffin%20cup%20until%20it%E2%80%99s%202/3rds%20full.%20Bake%20it%20until%20a%20toothpick%20inserted%20in%20the%20center%20of%20the%20cupcake%20comes%20out%20with%20little%20crumbs%20attached.%20Mine%20was%20ready%20around%20the%2023rd%20minute.%3C/p%3E%3Cp%3ERemove%20it%20from%20the%20oven%20and%20let%20it%20cool%20on%20a%20wire%20racking%20for%205%20minutes%20in%20the%20pan%20itself.%20Then%20remove%20the%20cupcakes%20out%20of%20the%20pan%20and%20cool%20it%20on%20the%20rack%20completely%20before%20frosting.%3C/p%3E%3Cp%3EI%20got%20about%2012%20regular%20size%20cupcakes%20and%206%20mini%20cupcakes.%20I%20think%20the%20recipe%20would%20yield%2015%20reuglar%20size%20cupcakes.%3C/p%3E%3Cp%3EUsually%20I%20puree%20the%20silken%20tofu%20and%20then%20add%20it%20to%20the%20rest%20of%20the%20ingredients.%20This%20time%20I%20didn%E2%80%99t.%20Just%20dumped%20together%20all%20the%20ingredients%20and%20used%20the%20electric%20beater%20to%20beat%20well.%20I%20did%20see%20bits%20and%20pieces%20of%20tofu%20that%20wouldn%E2%80%99t%20blend%20well%20enough%20but%20after%20a%20couple%20of%20times,%20I%20guess%20it%20did%20mash%20well.%20So%20if%20you%20don%E2%80%99t%20have%20an%20electric%20beater%20and%20plan%20to%20do%20the%20mixing%20with%20a%20spatula/wooden%20spoon,%20I%20would%20suggest%20pureeing%20the%20tofu%20first%20in%20a%20mixer%20and%20then%20adding%20it%20to%20the%20rest%20of%20the%20ingredients.%3C/p%3E%3Cp%3EThe%20original%20recipe%20had%20mentioned%20to%20add%20warm%20water%20along%20with%20the%20buttermilk%20and%20oil.%20I%20missed%20it%20because%20it%20was%20not%20mentioned%20in%20the%20ingredients%20list.%20I%20didn%E2%80%99t%20realize%20it%20until%20I%20sat%20down%20to%20write%20this%20post.%20I%E2%80%99m%20surprised%20that%20the%20cupcakes%20turned%20out%20so%20good%20even%20after%20I%20omitted%20to%20add%20the%20water.%20But%20I%20have%20to%20agree%20that%20the%20batter%20didn%E2%80%99t%20feel%20like%20a%20cupcake%20batter.%20It%20was%20not%20in%20a%20pouring%20consistency.%20I%20was%20really%20wondering%20what%20had%20happened%20but%20didn%E2%80%99t%20want%20to%20take%20chance%20by%20adding%20extra%20liquid.%20I%20would%20probably%20add%201/2%20cup%20of%20water%20when%20I%20bake%20it%20the%20next%20time.%20In%20that%20case%20the%20baking%20time%20might%20be%20increased%20by%20another%20minute%20or%20two,%20I%20guess.%3C/p%3E%3Cp%3E1.2.4%3C/p%3E){kind=link}
