Noodle Kugel With Sauteed Mushrooms

Ingredients

  • 8 ounce Medium egg noodles
  • 5 Tbsp. Oil, or possibly butter, divided
  • 1 lrg Onion, peeled, ended, chopped
  • 8 ounce Sm mushrooms, quartered if small, halved & sliced if large salt & pepper to taste
  • 3/4 tsp Paprika, divided
  • 2 x Large eggs, beaten
  • 3 Tbsp. Parsley minced optional

Directions

  1. Cook noodles, uncovered, in large pan of boiling salted water over high heat, stirring occasionally until nearly tender, 5 min. Drain. Rinse with cool water & drain well. Transfer noodles to large bowl. Heat 3 Tablespoons oil in large skillet over medium-low heat. Add in chopped onion & saute/fry until very tender, 10 min. Add in 1 Tablespoons oil to skillet & heat, then add in mushrooms, salt & pepper & 1/4 t paprika. Saute/fry until mushrooms are tender & onions are browned, 10 min. Add in mushroom mix, Large eggs & parsley to noodles & mix well. Taste & adjust seasonings. Butter or possibly oil 6 c. baking dish & add in noodle mix. Sprinkle with remaining 1 Tablespoons oil, then with remaining 1/2 t paprika. Bake @ 350 until set, 30 min. Serve from baking dish. 4-5 side dish servings.
