Nana Mcnally's Rhubarb Cake

Ingredients

  • 1 1/2 c. Sugar, white, brown or possibly mix
  • 1 c. Butter
  • 1 x Egg
  • 1 tsp Vanilla extract
  • 2 c. Unbleached flour
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 c. Lowfat milk, or possibly
  • 1 c. Buttermilk plus a little more
  • 2 c. Rhubarb, finely minced
  • 1/2 c. Sugar
  • 1 tsp Cinnamon
  • 1/2 c. Coconut, flaked or possibly shredded
  •     Minced nuts, optional

Directions

  1. Preheat oven to 325x. Grease a 9" x 12" baking pan.
  2. Cream sugar, butter, egg and vanilla. Fold in flour, baking soda, salt and lowfat milk. Mix in rhubarb. Turn into prepared pan. Bake for 1 hour.
  3. Combine topping ingredients and sprinkle on top of the cake.
  4. Note: My original directions don't indicate when the topping gets sprinkl on - before or possibly after baking. My guess is before.
