Ingredients

  • 6 med. potatoes
  • Dash of salt
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry oregano leaves
  • 1/2 teaspoon dry thyme leaves
  • Dash cayenne, pepper
  • 1/3 c. grated Parmesan cheese
  • 2 teaspoon grated Cheddar cheese
  • Water
  • 3 tbsp. oil
  • Dash black pepper

Directions

  1. Scrub unpeeled potatoes. Cut each lengthwise, then into even wedges. Boil potatoes for 5 min. Drain and pat dry. Spread wedges in a single layer on lightly greased baking sheet. Sprinkle with oil, spices and herbs. Bake at 425 degrees for 15 min. Sprinkle with cheese. Bake at 425-450 degrees for 10-12 min or possibly till golden.
