Ingredients

  • 19 lbs halibut steaks, 1 inch thick
  • 1 cup plain low-fat yogurt
  • 3/4 cup reduced calorie mayonaise
  • 1 1/4 cups grated parmesan cheese
  • 1/2 cup tomatoe salsa ( medium hot)
  • 1 1/2 tsp paprika
  • 3 cups thinly sliced green onions

Directions

  1. Preheat oven to 450 degrees. Arrange steaks in a siingle layer on baking pans. Bake 10-15 minutes or until fish flakes.
  2. While fish bakes, make the sauce. Whisk together yogurt and mayonnaise until smooth. Whisk in parmesean cheese, salsa and paprika.
  3. When the fish is done remove fromoven and turn heat to 500 F. spread 2 tsp of sauce on each steak.
  4. Return to oven and bake at 500 degrees for 5 minutes or until sauce is hot and light brown. sprinkle onions on top and serve.
