Ingredients

  • 1 fryer, cut up
  • 1/2 c. oil
  • 1 c. rice, uncooked
  • 1/2 c. onion, minced
  • 1 clove garlic, chopped
  • 1/4 c. tomato sauce
  • 2 1/2 c. boiling water with 2 chicken bouillon cubes
  • Sliced mushrooms (optional)
  • Salt and pepper

Directions

  1. Fry chicken in oil till delicately brown. Remove from pan. Add in uncooked rice and fry. Add in rest of ingredients; add in chicken. Simmer, covered, undisturbed for 30 min. Great served with fresh pinto beans, flour tortillas and salsa. Makes 4-6 servings.
