%20and%20some%20baba%20ghanoush%20(recipe%20coming%20soon!)%20to%20serve%20with%20the%20quesadillas.%20Some%20garlic%20hummus%20and/or%20some%20extra%20Girard's%20Greek%20Feta%20Vinaigrette%20would%20also%20be%20a%20great%20dipping%20option!%20This%20recipe%20would%20certainly%20make%20a%20delicious%20light%20lunch,%20but%20I%20envision%20it%20as%20the%20perfect%20side%20dish%20for%20some%20chicken%20shawarma!%3C/p%3E%3Cp%3EThe%20dressing%20worked%20just%20like%20I%20hoped%20it%20would:%20adding%20a%20tangy%20zing%20with%20Greek%20notes%20to%20the%20crispy%20savory%20falafel%20patties%20and%20melty%20feta.%20I%20can't%20wait%20to%20try%20the%20other%20flavors%20now%20that%20I%20know%20I%20enjoy%20the%20brand%20%E2%80%94%20maybe%20in%20other%20quesadilla%20flavors!%3C/p%3E%3Cp%3EMelty%20Falafel%20Quesadilla%20%20%20%20%20%20%20%20%20%20Author:%20Willow%20Bird%20Baking%3C/p%3E%3Cp%3E2%20(15-ounce)%20cans%20chickpeas,%20rinsed%20and%20drained%203%20tablespoons%20flour%203%20tablespoons%20fresh%20parsley%204%20cloves%20garlic,%20minced%202%20teaspoons%20ground%20cumin%202%20teaspoons%20ground%20coriander%201%20teaspoon%20chili%20powder%201/2%20teaspoon%20salt%201%20dash%20freshly%20ground%20black%20pepper%20up%20to%201/4%20cup%20olive%20oil%20for%20pan%20frying%203%20pitas,%20split%20in%20half%203/4%20cup%20Girard's%20Greek%20Feta%20Vinaigrette%204%20ounces%20feta%20cheese,%20crumbled%3C/p%3E%3Cp%3EMake%20the%20falafel:%20Place%20all%20the%20ingredients%20in%20the%20food%20processor%20and%20pulse%20until%20well%20combined,%20scraping%20the%20sides%20every%20now%20and%20then.%20Form%20the%20mixture%20into%20firm%20patties%20that%20are%20about%201/2-inch%20thick%20and%203%20inches%20in%20diameter%20(you%20want%20to%20end%20up%20with%209-12%20patties).%20Heat%202%20tablespoons%20of%20olive%20oil%20in%20a%20skillet%20over%20medium-high%20heat.%20When%20it%20shimmers,%20pan-fry%20half%20of%20the%20patties%20for%20around%202-3%20minutes%20on%20each%20side,%20or%20until%20they're%20browned.%20Remove%20them%20to%20a%20paper%20towel-lined%20plate%20to%20drain.%20Add%20more%20olive%20oil%20as%20needed%20to%20fry%20the%20second%20batch.%20Assemble%20the%20quesadillas:%20Heat%20a%20large%20skillet%20over%20medium%20heat%20and%20place%20one%20half%20of%20a%20pita%20into%20it.%20Drizzle%20about%201/4%20cup%20of%20Girard's%20Greek%20Feta%20Vinaigrette%20salad%20dressing%20over%20the%20pita.%20Crumble%20some%20feta%20over%20top.%20Arrange%203-4%20falafel%20patties%20on%20the%20pita.%20Sprinkle%20on%20a%20bit%20more%20feta,%20especially%20on%20each%20patty.%20Top%20with%20the%20top%20half%20of%20the%20pita%20and%20then%20a%20heavy%20panini%20press%20or%20another%20skillet.%20Press%20down%20to%20flatten.%20Grill%20the%20quesadilla%20for%202-4%20minutes%20per%20side%20(I%20have%20cast%20iron,%20so%20I%20started%20out%20with%20about%205%20minutes%20as%20my%20skillet%20warmed%20up%20and%20then%20switched%20over%20to%202%20minutes%20when%20it%20started%20retaining%20lots%20of%20heat)%20or%20until%20the%20quesadilla%20is%20toasty%20and%20the%20cheese%20is%20melty.%20Cut%20into%20four%20slices%20and%20serve%20with%20tomato-parsley%20salad,%20tahini%20sauce,%20baba%20ghanoush,%20hummus,%20Girard's%20Greek%20Feta%20Vinaigrette,%20or%20whatever%20you%20like!%20%203.2.2925%3C/p%3E%3Cp%3EFirst%20created%20by%20Chef%20Pierre%20Girard%20in%201939,%20all%20of%20Girard%E2%80%99s%20Salad%20Dressings%20are%20made%20with%20the%20care%20and%20unique%20flavor%20found%20in%20a%20chef%E2%80%99s%20touch%20that%20inspires%20delicious%20meals.%3C/p%3E){kind=link}
