Ingredients

  • 2 x Large eggs -- separated
  • 1 c. Sugar
  • 1/2 c. Margarine -- softened
  • 1/4 tsp Salt
  • 1 tsp Vanilla
  • 1 1/2 c. Flour -- sifted
  • 1 Tbsp. Flour -- to coat berries
  • 1 tsp Baking pwdr
  • 1/3 c. Lowfat milk
  • 1 1/2 c. Fresh blueberries Cinnamon sugar -- for Topping

Directions

  1. Preheat oven to 350^. Beat egg whites till stiff. Beat in 1/4 c. of sugar. In another bowl, cream margarine; add in salt, vanilla, and remaining sugar gradually. Add in egg yolks and beat till creamy. Sift flour with baking pwdr. Add in alternately to creamed mix with lowfat milk. Mix in beaten egg whites. Coat the blueberries with 1 Tbsp. of flour and then fold into mix. Turn into 8x8 inch pan. Sprinkle cinnamon sugar on top.
  2. Bake in 350^ oven for 50 min. Cold on rack. Wrap any leftovers and store in refrigerator. May be frzn.
