Mediterranean Nachos (Greek Nachos)

Yummy Greek flavors in nacho form. Instead of sour cream you could use some tzatziki sauce or slice some raw baby spinach leaves. You can also use a flavored feta cheese if you like. To make a heartier dish you can add some shredded chicken or tuna to the tomato mixture.

Ingredients

  • 2 Tablespoons finely chopped kalamata olives
  • 2 Tablespoons finely chopped sun-dried tomatoes in oil
  • 2 teaspoons oil from the sun-dried tomato jar
  • 1 small plum tomato, seeded and chopped
  • 1 medium green onion, thinly sliced approx. a Tbsp
  • 4oz restaurant style tortilla chips approx 35
  • 4oz feta cheese, finely crumbled (1 cup)
  • Tzatziki and or chopped raw baby spinach if you like

Directions

  1. In a small bowl, mix olives, sundried tomatoes, oil, plum tomato and onion and set aside.
  2. On microwavable plate. arrange tortilla chips in a single layer. Top evenly with the cheese. Microwave uncovered on high for 1 minute. Rotate plate and cook for another 30-60 seconds till cheese is melted.
  3. Spoon tomato mixture evenly over chips and cheese
