Marshmallow Frosting

Ingredients

  • 1 1/2 c. Sugar
  • 3/4 c. Water
  • 3/4 tsp Vinegar
  • 3 x Egg whites
  • 15 lrg Marshmallows, minced

Directions

  1. Combine sugar, water and vinegar in a heavy saucepan. Cook over medium heat, stirring frequently till mix comes to a boil and sugar disolves.
  2. Continue cooking, stirrin frequently till mix reaches soft ball stage
  3. (240 ). Beat egg whites till foamy. While beating at medium speed, slowly pour warm syrup in a thin stream over egg whites. Turn mixer to high speed and continue beating till stiff peaks form and frosting is thick sufficient to spread. Mix in marshmallows. Sufficient to cover a 3-layer cake.
