Ingredients

  • 1 1/2 c. Miniature marshmallows
  • 1 1/2 c. Thawed Cold Whip topping
  • 3 c. Cool water
  • 1 x (3 ounce) pkg Jell-o Lemon flavored gelatin
  • 1 x (3 ounce) pkg Jell-o Lime flavored gelatin
  • 1 x (11 ounce) can mandarin orange segments, liquid removed

Directions

  1. Fold marshmallows into whipped topping; set aside. Bring 2 c. water to boil. Dissolve lime and lemon gelatin separately in 1 c. water for each.
  2. Add in 1/2 c. cool water to each. Stir orange segments into lemon gelatin.
  3. Pour into separate 8 inch square baking pans, refrigeratetill hard. Cut into 1/2 inch cubes. For each serving, layer parfait glass with lemon gelatin cubes, 1/4 c. marshmallow mix and lime gelatin cubes. Top each parfait with remaining marshmallow mix. 6 servings.
  4. Prep time: 15 min plus chilling.
  5. Variation: Spoon dessert topping over prepared pudding, fresh fruit or possibly lb. cake.
