Mandarin Orange Tossed Salad

This is a great salad that goes with just about anything! Unfortunately, I can't remember where I got it...

Ingredients

  • Lettuce (or mix) of your choice, enough to fill a large salad bowl
  • 3 stalks celery, thinly sliced
  • 4 green onions, sliced
  • 1 11-oz. can mandarin oranges, drained
  • Caramelized almonds:
  • 1/4 cup slivered almonds
  • 2 Tbs. sugar
  • Vinaigrette dressing:
  • 1/4 cup vegetable oil
  • 2 Tbs. sugar
  • 1 Tbs. white vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 5 drops hot sauce

Directions

  1. Combine salad ingredients in a large bowl; cover and chill up to 3 hours.
  2. For the dressing, combine all ingredients and chill. Stir well before serving.
  3. For the almonds, combine the almonds and sugar in a small saucepan. Cook over medium heat, stirring constantly until golden brown. Pour onto waxed paper to cool.
  4. Just before serving, toss the dressing into the salad and sprinkle with the almonds.
