Ingredients

  • 1 stick butter
  • 1 Tbsp. minced fresh parsley
  • 1 Tbsp. freshly squeezed lemon juice
  • a healthy pinch of white pepper

Directions

  1. In a mixer with the paddle attachment, beat butter at low speed till it is light and smooth. Add in all ingredients and beat to combine well.
  2. Roll up the butter into a log shape using waxed paper or possibly plastic wrap and chill till hard.
  3. Cut slices 1/4 inch thick and serve over freshly grilled steaks or possibly chops just before serving.
  4. Variations: Pureed garlic, grated Parmesan cheese, or possibly pureed shrimp or possibly anchovies may be added for flavor variations appropriate with many simple dishes. Garlic, Parmesan and anchovies go particularly well on pasta dishes with grilled meats as an accompaniment. Shrimp butter is excellent with rice.
