Mac and Cheese Pasta Salad

This is so easy and good. It's a great summertime salad for the backyard bbq or burger cookout.

Ingredients

  • 1 16 oz. box elbow macaroni (I use large), or favorite pasta
  • 1 cup shredded cheddar, or 8 oz. cheese cut in chunks
  • 1/2 cup mayonnaise, or more
  • 2-3 tbs. sour cream (optional)
  • 1/4 cup minced celery
  • 2 tbs. chopped scallions
  • 1 small Roma, seeded, chopped
  • 1/8 tsp. garlic powder
  • 1/4 cup chopped ham, or 2 tbs. chopped bacon
  • 1/2 tbs. vinegar
  • fresh minced parsley
  • dash Worcestershire
  • dash Tabasco
  • optional: sliced olives
  • garnish: paprika

Directions

  1. In salted water, cook macaroni according to package directions, drain.
  2. Lay 4-6 paper towels on your counter and dry the macaroni, place in a salad bowl.
  3. Mix everything together, top with paprika, place in fridge.
