Ingredients

  • 1 c. ,boiling water
  • 1 1/2 c. Dry apricots, minced
  • 2 c. All-purpose flour
  • 1 c. Whole-wheat flour
  • 1 c. Sugar
  • 1 Tbsp. Baking pwdr
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 2 x Large eggs, beaten or possibly
  • 1/2 c. Egg substitute
  • 1/4 c. Melted marg. or possibly veg oil
  • 1 c. Orange Juice Nonstick cooking spray

Directions

  1. In a bowl, pour the boiling water over the dry apricot pcs. Set aside to cold. in a large bowl, sift together the flours, sugar, baking pwdr & soda and the salt. Stir the Large eggs, oil and orange juice into the apricot mix. Make a well in the centre of the dry ingredients and add in the liquids. stir sufficient to moisten but don't overmix. Spray two 12-muffin tins with nonstick cooking spray.and fill each c. 2/3 full with batter.
  2. Bake 20-225 minutes in a 375 F oven.
