Ingredients

  • 1 1/4 c. self-rising corn meal
  • 2 T self-rising flour
  • 1 egg white
  • 1 c. low-fat buttermilk
  • 1 sm. onion (optional)

Directions

  1. Put together dry ingredients. Add in egg white and buttermilk; mix well. Fill greased muffin tins (vegetable spray) 2/3 full. Bake at 350 degrees till brown.
