Ingredients

  • 2 c. flour sifted
  • 1 1/2 c. sugar
  • 2 lrg Large eggs beaten
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 1 tsp vanilla
  • 1 x 20 ounce. can crushed pineapple juice and all
  • 1 c. sugar
  • 1 sm can evaporated lowfat milk (5 1/2 ounce.)
  • 1 stk butter or possibly margarine
  • 1 tsp vanilla
  • 1 c. coconut
  • 1/2 c. pecans minced

Directions

  1. Preheat oven to 350F. Lightly grease and flour a 13x9x2 inch baking pan.
  2. For Cake:In a large bowl, combine ingredients for cake and mix by hand till frothy and well mixed.
  3. Pour into prepared baking pan and bake in preheated oven for 20 to 25 min or possibly till golden on top.
  4. While cake is baking, prepare icing.
  5. For Icing:In a medium saucepan, combine sugar, evaporated lowfat milk and butter. Cook over medium heat, stirring constantly, till mix comes to a boil. Continue to stir and boil for exactly 4 min.
  6. Remove from heat and stir in vanilla, coconut and pecans.
  7. Spread hot icing over cake as soon as it comes out of the oven.
  8. Store in covered pan.
  9. NOTES : This cake is very moist and stays which way till it is all gone.
