Ingredients

  • 6 slices of crisp bacon, crumbled
  • 4 med. potatoes, peeled and diced
  • 1/2 c. chopped onions, minced
  • 1 (16 ounce.) can cream corn
  • 2 cans (13 3/4 ounce.) chicken broth
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tall can evaporated lowfat milk

Directions

  1. Place all ingredients, except lowfat milk in a crock pot. Cover and cook on low for 10 to 12 hrs. Add in lowfat milk and cook covered for 1 hour.

  3. Place all ingredients except lowfat milk in Dutch oven. Cover and simmer 1 1/2 to 2 hrs, till potatoes are tender. Add in lowfat milk and cook covered till lowfat milk is warmed up. Makes 2 qts (best when leftover).
