Loaded Mashed Potato Bake Recipe
Excellent mashed potatoes to serve with any beef entrée! My family loves these.

Directions
- Peel and quarter potatoes and add to boiling salted water and cook 15 minutes or until fork tender, drain and add to a large bowl, add cream, butter, minced garlic clove, S & P, whip with a hand mixer
- Cut and diced bell pepper finely, diced finely scallions, add chopped cooked bacon bits, stir well to combine
- Transfer to a non stick baking dish, add cheeses and gently fold in the mixture
- Place into a hot 400 F oven for 15 minutes
- Serve and enjoy!
