Loaded Mashed Potato Bake

Excellent mashed potatoes to serve with any beef entrée! My family loves these.

Ingredients

  • 3 pounds Red Potatoes
  • 1/2 bell pepper
  • 2 green onions (scallions)
  • 3 slices cooked crispy bacon
  • 1/4 cup light cream
  • 1/4 stick sweet cream butter
  • salt & black Pepper to taste
  • one minced clove of garlic
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup parmesan cheese

Directions

  1. Peel and quarter potatoes and add to boiling salted water and cook 15 minutes or until fork tender, drain and add to a large bowl, add cream, butter, minced garlic clove, S & P, whip with a hand mixer
  2. Cut and diced bell pepper finely, diced finely scallions, add chopped cooked bacon bits, stir well to combine
  3. Transfer to a non stick baking dish, add cheeses and gently fold in the mixture
  4. Place into a hot 400 F oven for 15 minutes
  5. Serve and enjoy!
