Ingredients

  • 2 x Jalapeno peppers
  • 1 lb Grnd beef
  • 1 x Egg
  • 1/2 c. Dry bread crumbs
  • 1/4 c. Lowfat milk
  • 1/4 c. Monterey jack cheese shredded
  • 1 sm Onion (about 1/4 c.) finely minced
  • 1 tsp Salt
  • 1/4 tsp Pepper Salsa (see following

Directions

  1. Heat oven to 400F. Remove stems, seeds and membranes from peppers; chop peppers. Mix peppers, beef, egg, bread crumbs, lowfat milk, cheese, onion, salt and pepper. Shape mix into 1-inch balls. Place in ungreased pan, 13x9x2-inches. Cook uncovered in oven till brown, 15 to 20 min. Serve with salsa.
