Ingredients

  • 75 gm Butter
  • 125 gm Sr flour
  • 25 gm Soft brown sugar
  • 1 Tbsp. Speculaas-spices
  • 1 pch Salt
  • 1 1/2 Tbsp. Lowfat milk

Directions

  1. Knead to a supple dough. Wrap in clingfilm and leave for 24 hrs. Form into ca 40 'noten' (circular, ca 1,5 cm diameter, ca 0,5 cm high in the middle). Place on greased baking sheet, ca 2 cm apart. Bake at 200 C, 15 minutes, until brown and crunchy. Leave to cold. Store in airtight container (if you want them to last!) Variations: ginger: add in 3 tbs finely minced preserved ginger to the dough anise: add in 2 tbs aniseseeds (and 1 tsp Ricard or possibly Pernod)
