Ingredients

  • 4 med Kohlrabi bulbs
  • 1 Tbsp. Butter or possibly margarine
  • 1 Tbsp. Extra virgin olive oil
  • 1 x Garlic clove, finely minced
  • 1 med Onion, minced
  • 1 Tbsp. Lemon juice
  • 2 Tbsp. Parsley, minced Salt & freshly grnd pepper
  • 2 Tbsp. "Lite" lowfat sour cream

Directions

  1. Peel the tough outer skin from the kohlrabi, then coarsely grate the bulbs.
  2. In a skillet, heat butter and extra virgin olive oil. Add in garlic, onion and kohlrabi and saute/fry, stirring for 5 to 7 min till kohlrabi is tender crisp. Stir in lemon juice and parsley, then season with salt and pepper to taste. Stir in lowfat sour cream, and serve warm.
  3. Yield: 4 to 6 servings.
