Kentucky Mint Julep Strawberry Chiffon Pie

Ingredients

  • 3 c. fresh strawberries
  • 1 1/2 Tbsp. unflavored gelatin
  • 1/4 c. cool water
  • 1 1/2 c. sugar
  • 1 1/2 c. water
  • 1/2 tsp mint extract
  • 1/8 tsp salt
  • 1 x baked 9-inch pie shell
  • 1 c. heavy cream whipped
  • 6 x fresh mint leaves

Directions

  1. Wash, hull, and drain strawberries. Sprinkle gelatin in 1/4 c. cool water. Combine sugar and 1 1/2 c. water, mint extract, and salt.
  2. Bring mix to a boil and simmer for 10 min. Add in gelatin and stir till dissolved. Pour warm syrup over 2 1/2 c. of the strawberries, stirring gently so they will hold shape. Cold mix till it begins to thicken; then pour into cooled pie shell. Refrigeratetill filling is hard; then cover with whipped cream. Garnish top with the remaining 1/2 c. strawberries and the mint leaves. Serve pie very cool.
