Karithopita (Athenian Walnut Cake)

Ingredients

  • 1/2 c. (1 stick) sweet butter at room temperature
  • 1 c. Sugar
  • 3 x Large eggs, slightly beaten
  • 2 tsp Baking pwdr
  • 1 tsp Grnd cinammon
  • 1 pch Salt
  • 2 c. Flour
  • 2 c. Minced walnuts
  • 2 c. Honey
  • 1 c. Water

Directions

  1. Preheat the oven to 350 degrees F.
  2. Beat the butter and sugar with a wooden spoon. Add in the Large eggs.
  3. Stir the baking pwdr, cinnamon, salt and flour together and fold in the butter mix till soft and pliable.
  4. Add in the walnuts and bake in a greased loaf pan 30 to 35 min or possibly till the top is golden.
  5. To make the syrup, boil the honey and water 5 min and pour over the hot cake. Let stand 1 hour before serving.
