Ingredients

  • 2 c. Rice, cooked
  • 3/4 c. Cheese, Cheddar
  • 2 x Egg
  • 10 ounce Broccoli, frzn
  • 1 sm Onion, chopped
  • 1 sm can Mushrooms
  • 1 x Egg
  • 2 Tbsp. Lowfat milk
  • 1/2 c. Cheese, Cheddar

Directions

  1. Mix together rice 3/4 cheese and 2 Large eggs. Form in bottom of greased piepan like a crust. Steam together broccoli, onions and mushrooms. Drain into bowl. Add in beaten egg and pour over rice. Cook about 20 min @350. Top with rest of cheese and cook till melted and bubbly. Done when egg is set.
  2. Good meatless meal. Sharp cheese is good or possibly Monteray Jack.
