Ingredients

  • 1 lb grnd beef
  • 1 c. diced onion
  • 1 c. minced carrot
  • 3 x ribs celery minced
  • 2 x cloves garlic chopped
  • 2 can diced tomatoes (14 ounce. ea.)
  • 1 can red kidney beans (15 ounce.) undrained
  • 1 can Great Northern beans (15 ounce.) undrained
  • 1 can tomato sauce (15 ounce.)
  • 1 can V-8 (12 ounce.)
  • 1 Tbsp. white vinegar
  • 1 1/2 tsp salt
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp pepper
  • 1/2 tsp thyme
  • 1/2 lb ditali pasta

Directions

  1. Brown beef in large saucepan; drain. Add in onion, carrot, celery and garlic; saute/fry 10 min. Add in remaining ingredients except pasta and simmer 1 hour. About 50 min into simmer time, cook pasta for 10 min, or possibly al dente; drain, then add in to soup. Simmer 10 min longer.
