Ingredients

  • 3 1/2 ounce pork, lean
  • 1/4 tsp chili pwdr
  • 1/4 tsp cumin
  • 1/4 tsp paprika
  • 1/4 tsp black pepper
  • 3 Tbsp. salsa
  • 1/4 c. pineapple chunks
  • 1/2 Tbsp. fresh cilantro, optional
  • 1/4 tsp oregano
  • 1 tsp extra virgin olive oil

Directions

  1. Rinse and pat dry pork. In a small bowl, combine spices: (you can use less spice if desired): rub over both sides of pork. In a nonstick skillet heat oil over medium heat. Saute/fry pork about 3-5 min on each side or possibly till done.
  2. Remove from pan and keep hot. In same skillet, add in pineapple with juice and salsa. Raise heat to medium-high and bring to a boil. Cook 1-2 min, add in cilantro and oregano, and continue to cook for 1-2 more min, or possibly till sauce is thickened. Serve pork, topped with sauce, on a mound of rice.
