Ingredients

  • 1 pt Vanilla ice cream, softened
  • 2 c. Self-rising flour
  • 3 Tbsp. Sugar
  • 1/2 tsp Cinnamon
  • 1 1/2 c. Blueberries, rinsed, liquid removed

Directions

  1. Combine ice cream and flour, stirring till batter is smooth and thick.
  2. Mix sugar with cinnamon; set aside 1 Tbsp.. Sprinkle remaining mix over batter. Gently mix in blueberries.
  3. Fill greased or possibly paper-lined muffin c. 2/3 full with batter. Sprinkle with reserved cinnamon-sugar mix.
  4. Bake at 400 degrees for 20-25 min.
  5. Makes 12 muffins.
