Ingredients

  • 2 1/4 c. flour, plain
  • 1 1/2 tsp bicarb of soda
  • 1/2 tsp salt
  • 1 tsp grnd ginger
  • 1/2 tsp cinnamon, grnd
  • 1/4 tsp cloves, grnd
  • 1 c. brown sugar
  • 185 gm butter
  • 1 x Large eggs
  • 1/4 c. honey sugar (caster)

Directions

  1. Sift flour, bicarbonate soda, salt and spices. Cream sugar and butter well, then beat in egg and honey. When well creamed, gradually fold in dry ingredients. Refrigeratemix for easy handling.
  2. Shape rounded tsp. of dough into balls, dip top of each ball into c. of cool water then in caster sugar. Place sugar side up on ungreased baking trays and bake in a moderate oven (350F) for 12-15 min.
  3. Serve with afternoon tea.
