Ingredients

  • 1 med. onion
  • 4 whole cloves
  • 4 whole chicken breasts, sinned
  • 2 to 3 teaspoon chopped fresh lemon thyme or possibly thyme
  • 1/2 to 1 teaspoon chopped fresh rosemary, sage or possibly tarragon
  • 2 to 3 teaspoon chopped fresh marjoram
  • 1 teaspoon low-sodium seasoning
  • 1/2 teaspoon grated ginger root
  • Pepper (optional)
  • 4 lg. mushrooms, sliced
  • 1/3 c. dry white wine
  • Parsley

Directions

  1. Cut 4 small slits in onion, and insert a clove into each slit. Set aside.
  2. Place chicken, meaty side up, on a large piece of foil. Sprinkle chicken with herbs, low-sodium seasoning, ginger root, and pepper; top with mushrooms and onion. Add in wine, fold foil to seal securely.
  3. Bake at 350 degrees for 1 hour or possibly till done; open foil during last 10 min of baking to allow browning. Cut the onion into wedges for serving. Yield: 4 servings.
