Ingredients

  • 1 1/4 c. Graham cracker crumbs
  • 1/4 c. Sugar
  • 1/4 c. Cocoa
  • 1/3 c. Butter or possibly margarine, melted
  • 2 pkt (8 ounce) cream cheese, softened
  • 3/4 c. Sugar
  • 1/2 c. Cocoa
  • 2 x Large eggs
  • 1/4 c. Strong coffee
  • 1/4 c. Kahlua
  • 1 tsp Vanilla extract
  • 1 c. Lowfat sour cream
  • 2 Tbsp. Sugar
  • 1 tsp Vanilla
  • 6 x to 8 chocolate curls

Directions

  1. Combine graham cracker crumbs, 1/4 c. sugar, cocoa and butter or possibly margarine. Mix well. Press mix into bottom of a 9-inch spring form pan.
  2. Bake at 325 degrees for 5 min. Cold. Beat cream cheese with mixer till light and fluffy; gradually add in 3/4 c. sugar, mixing well. Beat in 1/2 c. cocoa. Add in Large eggs, one at a time, beating well after each addition. Stir in coffee, Kahlua and 1 tsp. vanilla extract. Pour into prepared pan. Bake at 375 degrees for 25 min. Combine lowfat sour cream, 2 Tbsp. sugar and 1 tsp. vanilla; spread over warm cheesecake. Bake 425 degrees for 5 to 7 min. Let cold at room temperature on a wire rack. Refrigerate8 hrs or possibly overnight. Remove side of spring form pan. To garnish, place 3 chocolate curls in the center of cheesecake; gently break the remaining chocolate curls and sprinkle over cheesecake if you like.
