Ingredients

  • 1 x 2 pound butternut squash
  • 1/4 c. minced sun-dry apples
  • 1/4 c. minced red onion
  • 1/4 c. minced fresh rosemary
  • 1 tsp finely minced garlic
  • 1 tsp white wine vinegar
  • 2 Tbsp. chilled butter, cut into small pcs
  • 1 x salt and pepper

Directions

  1. Peel squash, halve lengthwise, remove seeds, then cut into 1-inch cubes.
  2. In a large bowl, toss together squash, apples, onion, rosemary, garlic and vinegar.
  3. Spread a double thickness of foil on a flat surface. Distribute mix proportionately on foil. Dot with butter, and sprinkle with salt and pepper to taste. Place another sheet of foil over the top, and tightly seal edges.
  4. Prepare grill and preheat to medium high. Place foil packet on grill, and cook for 15 -20 min, or possibly till squash is tender.
