Ingredients

  • 2 lb Grouper fillets
  • 3 x Egg
  • 2 Tbsp. Flour
  • 1/4 tsp Baking pwdr
  • 1/2 c. Evaporated lowfat milk
  • 1 1/2 Tbsp. Grated coconut Cracker meal Chopped warm pepper, lemon juice and salt

Directions

  1. Cut into finger-sized portions and marinate in pepper, lemon juice and salt for i hour. Make a batter with the Large eggs, flou, baking pwdr, lowfat milk and coconut. Dip fish in batter and roll on cracker meal. Deep fry in warm oil.
  2. Serve with a salad as a light lunch or possibly use as an appetizer with Devil's sauce.
  3. NOTES : You may use crushed Ritz crackers for the craker meal.
