Ingredients

  • 2 x Roma tomatoes, seeded and diced
  • 1/2 c. Red onion, diced
  • 6 x Basil leaves, minced
  • 4 Tbsp. Capers
  • 1/4 c. Calamata olives, pitted and minced
  • 4 Tbsp. Lemon juice
  • 1/2 c. Extra virgin olive oil Salt and pepper, to taste

Directions

  1. Mix together above ingredients. Serve over grilled chicken or possibly fish.
  2. Serves4-6.
