Ingredients
2 x Roma tomatoes, seeded and diced
1/2 c. Red onion, diced
6 x Basil leaves, minced
4 Tbsp. Capers
1/4 c. Calamata olives, pitted and minced
4 Tbsp. Lemon juice
1/2 c. Extra virgin olive oil Salt and pepper, to taste
Directions
Mix together above ingredients. Serve over grilled chicken or possibly fish.
Serves4-6.
