Greek Potato Salad With Feta Vinaigrette

Ingredients

  • 900 gm Peeled red potatoes, in 1-in pcs, (about 6 c./2 lb)
  • 2 Tbsp. Red wine vinegar
  • 1/4 c. Extra-virgin extra virgin olive oil
  • 1 Tbsp. Dijon mustard
  • 2 Tbsp. Minced fresh oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/2 c. Halved pitted kalamata olives
  • 1 x Cucumber, peeled, seeded and diced
  • 1/2 c. Minced roasted red peppers
  • 1 sm Green pepper, diced
  • 1/2 c. Tiny-diced red onion
  • 125 gm (4 ounce) feta cheese, crumbled (about 1 c. crumbled cheese)
  • 1/4 c. Minced fresh Italian parsley

Directions

  1. Steam potatoes till very tender, 12 to 14 min. Meanwhile, in large bowl, make dressing by whisking together vinegar, extra virgin olive oil, mustard, oregano, salt and pepper. When potatoes are still hot, toss them with dressing and set aside till cold Stir in olives, cucumber, red and green peppers, onion, cheese and parsley.
